Ingredients
- 1 small cabbage, finely grated (about 4 cups)
- 4 large eggs
- 1 cup shredded mozzarella or cheddar cheese
- ½ cup grated Parmesan cheese
- 1 small onion, finely chopped
- 1 cup mushrooms, chopped
- ½ red bell pepper, diced
- 2 tablespoons fresh parsley, chopped
- 2 cloves garlic, minced
- ½ cup all-purpose flour (or oat flour)
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Grate the cabbage and squeeze out any excess moisture.
- In a large bowl, beat the eggs.
- Add the cabbage, onion, mushrooms, bell pepper, parsley, garlic, cheeses, olive oil, salt, pepper, and paprika. Mix well.
- Stir in the flour and baking powder until evenly combined.
- Pour the mixture into a greased loaf pan or baking dish.
- Bake for 40–50 minutes, or until golden brown and firm in the center.
- Let it cool for 10 minutes before slicing and serving.
