Ingredients
- 2 cups broccoli florets, finely chopped
- 1 medium carrot, grated
- 1 small zucchini, grated and squeezed dry
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- ¾ cup breadcrumbs (or panko)
- ½ cup grated Parmesan or cheddar cheese
- 2 tablespoons fresh parsley, chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon dried oregano
- 2–3 tablespoons olive oil (for frying)
Instructions
- Steam the broccoli for 3–4 minutes until slightly tender, then chop finely.
- Grate the carrot and zucchini, squeezing out excess moisture.
- In a large bowl, combine the broccoli, carrot, zucchini, green onions, garlic, eggs, breadcrumbs, cheese, parsley, salt, pepper, paprika, and oregano.
- Mix well until the mixture holds together. If it’s too wet, add a little more breadcrumbs.
- Shape into round patties about ½ inch (1 cm) thick.
- Heat the olive oil in a skillet over medium heat.
- Cook the patties for 4–5 minutes per side, until golden brown and crispy.
- Transfer to a paper towel-lined plate and serve warm.
