Instructions
- Wash, peel, and chop the beetroot into small pieces.
- Peel the ginger and slice it roughly.
- Add the beetroot, ginger, water, and lemon juice to a blender.
- Blend until smooth.
- Strain through a fine-mesh sieve or cheesecloth if you prefer a smoother drink.
- Stir in the honey if desired.
- Pour into a glass over ice and garnish with fresh mint leaves.
