Ingredients
For the Cake
- 2 cups (250 g) all-purpose flour
- 1½ cups (300 g) granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- 3 large eggs
- ½ cup (120 ml) vegetable oil
- ½ cup (120 ml) whole milk
- ¼ cup (60 ml) fresh lime juice
- 2 tbsp lime zest (from 2–3 fresh limes)
- 1 tsp vanilla extract
- Green food coloring (optional)
For the Lime Glaze
- 2 cups (240 g) powdered sugar
- 3–4 tbsp fresh lime juice
- 1 tsp lime zest
- 1 tbsp melted butter (optional, for extra richness)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch (20×20 cm) baking pan.
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, beat the eggs and sugar until light and fluffy.
- Mix in the oil, milk, lime juice, lime zest, and vanilla.
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Add a few drops of green food coloring if desired.
- Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely.
Make the Glaze
- Whisk together the powdered sugar, lime juice, lime zest, and melted butter until smooth.
- Spread the glaze evenly over the cooled cake.
- Let it set for 20–30 minutes before slicing.
