- 6–8 organic lemons
Instructions
- Wash the lemons thoroughly and dry them.
- Peel the lemons thinly, avoiding most of the white pith (or slice the whole lemons very thin if you prefer).
- Arrange the peels or slices on a dehydrator tray or baking sheet.
- Dry them in a dehydrator at 125°F (52°C) for 8–12 hours, or in an oven at the lowest temperature (about 170°F / 75°C) for 3–5 hours, until completely crisp.
- Let them cool completely.
- Grind the dried lemon pieces into a fine powder using a spice grinder or blender.
- Store the powder in an airtight glass jar in a cool, dry place for up to 6 months.
Ways to Use
- Add ½–1 teaspoon to tea or warm water.
- Mix into smoothies.
- Sprinkle over roasted vegetables, fish, or chicken.
- Use in salad dressings, marinades, soups, or baked goods.
- Blend into spice mixes for a bright citrus flavor.
Tip: For the best flavor, use organic lemons, since the peel is the main ingredient.
