Ingredients
- 1 cup ricotta cheese
- 2 large eggs
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons sugar (optional)
- ¼ teaspoon salt
- ½ cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon grated orange zest
- 1 tablespoon fresh orange juice
- Butter or oil for cooking
Instructions
- In a large bowl, whisk together the ricotta, eggs, milk, vanilla, orange zest, and orange juice until smooth.
- In another bowl, combine the flour, baking powder, sugar, and salt.
- Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
- Heat a lightly greased non-stick skillet over medium-low heat.
- Scoop about 2 tablespoons of batter for each pancake onto the skillet.
- Cook for 2–3 minutes, or until bubbles appear on the surface. Flip and cook for another 2–3 minutes until golden brown and cooked through.
- Repeat with the remaining batter.
