Ingredients
- 1 lb (450 g) fresh green beans, trimmed and cut into bite-sized pieces
- 3 egg yolks
- 2 tbsp butter
- 2 cloves garlic, minced
- 2 tbsp grated Parmesan cheese
- 1 tsp Dijon mustard (optional)
- ¼ tsp black pepper
- ½ tsp salt (or to taste)
- 1 tbsp chopped fresh parsley
Instructions
- Bring a large pot of salted water to a boil. Add the green beans and cook for 4–5 minutes until crisp-tender.
- Drain and immediately transfer the beans to a bowl of ice water to preserve their bright green color. Drain well.
- In a small bowl, whisk together the egg yolks, Parmesan, mustard (if using), salt, and black pepper.
- Melt the butter in a large skillet over medium-low heat. Add the garlic and sauté for about 30 seconds until fragrant.
- Add the green beans and toss to coat with the butter.
- Remove the skillet from the heat and quickly stir in the egg yolk mixture, tossing constantly until the residual heat creates a light, creamy coating. Avoid returning the pan to high heat to prevent the eggs from scrambling.
- Sprinkle with chopped parsley and serve immediately.
