Garlic Green Beans with Egg Yolks

Ingredients

  • 1 lb (450 g) fresh green beans, trimmed and cut into bite-sized pieces
  • 3 egg yolks
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 2 tbsp grated Parmesan cheese
  • 1 tsp Dijon mustard (optional)
  • ¼ tsp black pepper
  • ½ tsp salt (or to taste)
  • 1 tbsp chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook for 4–5 minutes until crisp-tender.
  2. Drain and immediately transfer the beans to a bowl of ice water to preserve their bright green color. Drain well.
  3. In a small bowl, whisk together the egg yolks, Parmesan, mustard (if using), salt, and black pepper.
  4. Melt the butter in a large skillet over medium-low heat. Add the garlic and sauté for about 30 seconds until fragrant.
  5. Add the green beans and toss to coat with the butter.
  6. Remove the skillet from the heat and quickly stir in the egg yolk mixture, tossing constantly until the residual heat creates a light, creamy coating. Avoid returning the pan to high heat to prevent the eggs from scrambling.
  7. Sprinkle with chopped parsley and serve immediately.

Serving Suggestion: Pair with grilled chicken, fish, or roasted potatoes for a delicious and satisfying meal.
