Baked Salmon with Roasted Vegetables

Ingredients

  • 2 salmon fillets (about 5–6 oz / 140–170 g each)
  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 zucchini, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried herbs (such as oregano or thyme)
  • Salt and black pepper, to taste
  • 1 lemon, cut into wedges

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the broccoli, carrots, and zucchini on a baking sheet. Drizzle with 1 tablespoon olive oil and season with garlic powder, herbs, salt, and pepper.
  3. Roast the vegetables for 10 minutes.
  4. Push the vegetables to the sides and place the salmon in the center. Brush with the remaining olive oil and season with a little salt and pepper.
  5. Return to the oven and bake for 10–15 minutes, or until the salmon flakes easily with a fork.
  6. Serve with a squeeze of fresh lemon.

Optional additions

  • A small serving of quinoa or brown rice.
  • A side salad with leafy greens.
  • Fresh parsley or dill for extra flavor.

This meal provides protein, fiber, and healthy fats, making it a balanced option for an evening meal. For many people, finishing dinner 2–3 hours before bedtime can also help promote more comfortable sleep.
