Ingredients
- 2 salmon fillets (about 5–6 oz / 140–170 g each)
- 2 cups broccoli florets
- 1 cup sliced carrots
- 1 zucchini, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried herbs (such as oregano or thyme)
- Salt and black pepper, to taste
- 1 lemon, cut into wedges
Instructions
- Preheat the oven to 400°F (200°C).
- Place the broccoli, carrots, and zucchini on a baking sheet. Drizzle with 1 tablespoon olive oil and season with garlic powder, herbs, salt, and pepper.
- Roast the vegetables for 10 minutes.
- Push the vegetables to the sides and place the salmon in the center. Brush with the remaining olive oil and season with a little salt and pepper.
- Return to the oven and bake for 10–15 minutes, or until the salmon flakes easily with a fork.
- Serve with a squeeze of fresh lemon.

- A small serving of quinoa or brown rice.

- Fresh parsley or dill for extra flavor.
