- 1 tablespoon extra virgin olive oil
- 1 teaspoon apple cider vinegar (optional)
- Juice of ½ lemon
- 1 tablespoon chopped fresh parsley
- A pinch of black pepper
- A pinch of sea salt (optional, or use sparingly)
Instructions
- Peel and thinly slice the red onion.
- If you prefer a milder flavor, soak the slices in cold water for 10 minutes, then drain.
- In a bowl, combine the onion with olive oil, lemon juice, apple cider vinegar, parsley, black pepper, and a small pinch of salt.
- Toss well and let the mixture rest for 10–15 minutes before serving.
- Enjoy as a side salad or topping for grilled chicken, fish, beans, or whole grains.
Tips
- Pair red onions with meals that include lean protein, healthy fats, and high-fiber foods to help support balanced blood sugar after eating.
- Fresh red onions retain more of their natural beneficial compounds than heavily cooked onions.
- For the best flavor and freshness, prepare just before serving.
Note: Red onions contain antioxidants and beneficial plant compounds that may support overall health as part of a balanced diet. However, they are not a treatment or cure for diabetes, and they should not replace prescribed medications or medical advice.
