Red Onion & Fresh Vegetable Salad

Ingredients:

  • 1 medium red onion, thinly sliced
  • 1 cucumber, diced
  • 2 medium tomatoes, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • ΒΌ teaspoon black pepper
  • A pinch of salt (optional)

Instructions:

  1. Slice the red onion and let it sit for 10 minutes to mellow its flavor.
  2. Combine the onion, cucumber, and tomatoes in a large bowl.
  3. Add the olive oil, lemon juice, parsley, black pepper, and optional salt.
  4. Toss well until everything is evenly coated.
  5. Serve immediately or chill for 15–20 minutes before serving.
